About Us

Croquembouche Factory wants to give an extraordinary high-quality dessert to elevate the elegancy of your celebration. We use our expertise on cream puffs to revive the traditional croquembouche cakes of France in the 1700’s and bring it to the Philippines. We want to revolutionize the presence of cakes into something different. Although the concept of cream puff towers is not new, it is underrated. With our passion for cream puffs, we’d love to take this concept and modernize it with new techniques and looks.

Our Cream Puffs

We have been making cream puffs for 10 years and we just keep improving ever since. Cream puff is the heart of a croquembouche, therefore we make it with great importance to our product. Our cream puffs are treated with precision when it comes to its ingredients and the dough of each pastry puff enters the oven evenly and comes out beautiful and round. The puff pastry have this light crunch and soft texture. Our cream filling is a diplomat cream which is made of both custard cream and whipped cream. This adds a whole new different texture to the cream with more richness and  balance in flavor.

Our Croquembouche

Croquembouche is a confectionery dessert and that means that it requires some simple to fancy decorations. Croquembouche is made by mounting cream puffs into a tower shaped cake. Most of these towers are made with cream puffs dipped in caramel and some are just made with plain ones. The design and creativity when it comes to making one of these are far from limited. For our croquembouche, our main style is for the cream puffs to have a clean and smooth coating featuring Belgian chocolates and stacked with skillful precision. It is made to order and it does take a good amount of time to prepare and build. From the heart up to the toppings, our croquembouche is made from fresh quality ingredients to deliver a delicious and healthy result.
